Miso Sweet Potato Soup

A comforting and flavorful soup featuring sweet potatoes, miso, and ginger.

  • 1.5 lbs Sweet potatoes peeled and cubed
  • 4 cups Vegetable broth
  • 2 tablespoons Miso paste white or yellow
  • 1 inch Ginger grated
  • 2 cloves Garlic minced
  • 1 tablespoon Olive oil

Instructions
 

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Add garlic and ginger and cook for 1 minute.
  • Add sweet potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until sweet potatoes are tender.
  • Remove from heat and stir in miso paste until dissolved.
  • Use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer the soup to a blender and blend until smooth.
  • Return the soup to the pot and heat through. Serve hot.

Notes

Garnish with chopped green onions or sesame seeds for added flavor and texture.
