  • Combine peanut butter and honey in a medium saucepan over medium heat.
  • Stir continuously until the mixture is smooth and well blended.
  • Remove from heat and stir in vanilla extract.
  • Add rolled oats and mix until evenly coated.
  • Drop tablespoon-sized balls onto a baking sheet lined with parchment paper.
  • Refrigerate until set, about 1 hour, before serving.
