  • 1.5 cups All-purpose flour
  • 1 tsp Baking soda
  • 0.5 tsp Salt
  • 0.75 cup Granulated sugar
  • 0.33 cup Vegetable oil
  • 1 large Egg
  • 0.5 cup Buttermilk
  • 1 tsp Vanilla extract
  • 1 cup Mashed ripe bananas (about 2 medium)
  • 0.5 cup Nutella

Preparation Steps

  • Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  • In a large bowl, whisk together flour, baking soda, and salt.
  • In a separate bowl, whisk together sugar, oil, egg, buttermilk, and vanilla extract.
  • Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  • Gently fold in the mashed bananas and Nutella.
  • Fill the muffin liners about 2/3 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

These muffins are best enjoyed fresh. Store in an airtight container at room temperature for up to 3 days.
