Oatmeal Breakfast Bars

These chewy oatmeal breakfast bars combine rolled oats, applesauce, walnuts, and dried cranberries in an easy pan-baked recipe.

  • ½ cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • 2 large eggs
  • ½ cup almond milk
  • ¼ cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • ¼ cup walnuts finely chopped
  • ¼ cup dried cranberries

  • Preheat the oven to 350°F and line an 8-inch square pan with parchment paper, leaving an overhang.
  • Combine the rolled oats, sugar, baking powder, salt, and cinnamon in a medium bowl.
  • In a separate large bowl, whisk the eggs, almond milk, applesauce, and vanilla. Add the dry mixture to the wet mixture and let it stand for about 20 minutes.
  • Fold in the walnuts and dried cranberries, then spread the mixture evenly in the prepared pan.
  • Bake 25 to 30 minutes, until the edges are golden brown. Cool on a rack for 5 minutes, then cut into 16 bars.
