  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1.25 cups all-purpose flour
  • 0.75 teaspoon baking soda
  • 0.25 teaspoon salt
  • 2 tablespoons extra granulated sugar for rolling

Preparation Steps

  • Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  • Beat in the creamy peanut butter, egg, and vanilla extract until well combined and smooth.
  • In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Scoop the dough into 1-inch balls and roll each ball in the extra granulated sugar. Place them on the prepared baking sheets about 2 inches apart.
  • Using a fork, press a criss-cross pattern into the top of each cookie, flattening them slightly.
  • Bake for 9-11 minutes, or until the edges are lightly golden but the centers still look soft.
  • Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
