Instructions
Preparation Steps
In a large pot, combine lentils, vegetable broth, diced tomatoes, thyme, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils are tender.
Stir in heavy cream and heat through. Taste and adjust seasonings as needed.
