One-Pot Creamy Lentils

  • 1 cup Brown Lentils rinsed
  • 4 cups Vegetable Broth low sodium
  • 1 cup Diced Tomatoes
  • 0.5 cup Heavy Cream
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black Pepper to taste

Preparation Steps

  • In a large pot, combine lentils, vegetable broth, diced tomatoes, thyme, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils are tender.
  • Stir in heavy cream and heat through. Taste and adjust seasonings as needed.
  • Serve hot and enjoy!

Garnish with fresh parsley or a dollop of sour cream, if desired.
