Oreo Earthquake Cake

A decadent and easy Oreo earthquake cake with a chocolate base and pockets of creamy Oreo goodness.

Ingredients
  

Cake Batter

  • 1.5 cup all-purpose flour
  • 2 cup granulated sugar
  • 0.75 cup unsweetened cocoa powder
  • 1.5 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 0.5 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup boiling water

Oreo Filling

  • 24 whole Oreo cookies crushed
  • 4 ounce cream cheese softened
  • 0.25 cup powdered sugar

Optional Frosting

  • 1 cup buttercream frosting

Preparation Steps

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  • In a separate bowl, beat the eggs, milk, vegetable oil, and vanilla extract.
  • Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  • Carefully stir in the boiling water. The batter will be thin.
  • In a small bowl, combine the softened cream cheese and powdered sugar. Mix until smooth.
  • Pour half of the cake batter into the prepared baking pan.
  • Drop spoonfuls of the cream cheese mixture evenly over the batter. Sprinkle half of the crushed Oreos over the cream cheese.
  • Pour the remaining cake batter over the top. Sprinkle the rest of the crushed Oreos over the batter.
  • Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  • Once cooled, frost with your favorite buttercream frosting, if desired.

Notes

This cake is best served at room temperature. You can also add chocolate chips to the batter for extra chocolatey goodness.
