Peanut Butter Brownie Cookies

These chewy Peanut Butter Brownie Cookies are the perfect blend of fudgy brownie and peanut butter cookie. Easy to make and incredibly delicious!

  • 1 cup peanut butter
  • 0.5 cup packed brown sugar
  • 0.5 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt

Preparation Steps

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a large bowl, cream together the peanut butter, brown sugar, and granulated sugar until smooth.
  • Beat in the egg and vanilla extract.
  • In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Drop by rounded tablespoons onto the prepared baking sheets.
  • Bake for 10-12 minutes, or until edges are set and centers are slightly gooey.
  • Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
