Instructions
Preparation Steps
Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter and peanut butter until smooth.

Add the granulated sugar and brown sugar and beat until light and fluffy.

Beat in the egg and vanilla extract until well combined.

In a separate bowl, whisk together the flour, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Roll dough into 1-inch balls and place them about 2 inches apart on the prepared baking sheets.
Use a fork to press down on each cookie in a crisscross pattern.
Bake for 10-12 minutes, or until the edges are lightly golden brown and the centers are still slightly soft.
Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
For extra flavor, you can add chocolate chips to the dough. Enjoy these classic peanut butter cookies!
