Peanut Butter Cup Cookies

These delicious peanut butter cup cookies are soft, chewy, and packed with chocolate and peanut butter flavor. Perfect for any occasion!

Ingredients
  

Cookie Dough

  • 0.5 cup unsalted butter softened
  • 0.5 cup creamy peanut butter
  • 0.75 cup granulated sugar
  • 0.75 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt

Toppings

  • 1 cup mini peanut butter cups chopped
  • 0.5 cup chocolate chips semi-sweet or milk chocolate

Preparation Steps

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a large bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In a separate medium bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Stir in the chopped peanut butter cups and chocolate chips.
  • Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
  • Bake for 9-11 minutes, or until the edges are lightly golden and the centers are still slightly soft.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

For extra peanut butter flavor, you can add a tablespoon of peanut butter extract to the dough. These cookies also freeze well.
