Pear Thyme Gin Cake

A delightful cake infused with pear, thyme, and gin for a unique flavor combination.

  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 0.5 cup Unsalted butter Softened
  • 2 large Eggs
  • 0.25 cup Gin
  • 2 medium Pears Peeled and diced
  • 2 tablespoons Fresh thyme leaves
  • 1 teaspoon Baking powder

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the gin.
  • In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the diced pears and thyme leaves.
  • Pour batter into the prepared cake pan and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.

Notes

Serve with a dusting of powdered sugar or a dollop of whipped cream.
