Pecan Pie Bars

Delicious pecan pie bars with a buttery crust and a sweet, nutty filling. Perfect for any occasion!

Ingredients
  

Crust

  • 1.5 cups all-purpose flour
  • 0.75 cup unsalted butter, cold and cubed
  • 0.25 cup granulated sugar
  • 0.25 teaspoon salt

Filling

  • 1 cup pecan halves
  • 1 cup light corn syrup
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 0.25 cup unsalted butter, melted

Instructions
 

Prepare Crust

  • In a food processor, combine flour, cold butter, sugar, and salt. Pulse until mixture resembles coarse crumbs.
  • Add 2-4 tablespoons of ice water, one tablespoon at a time, pulsing until the dough just comes together.
  • Press dough into the bottom of a 9x13 inch baking pan. Bake at 350°F (175°C) for 15 minutes.

Make Filling

  • In a large bowl, whisk together corn syrup, sugar, eggs, vanilla extract, and salt.
  • Stir in melted butter and pecans.
  • Pour filling over the baked crust.
  • Bake at 350°F (175°C) for 30-35 minutes, or until filling is set.
  • Let cool completely before cutting into bars.
