Preparation Steps
Melt chocolate chips in the microwave or over a double boiler. Stir until smooth.
In a large bowl, beat together melted chocolate and cream cheese until well combined. Stir in peppermint extract.
Refrigerate the mixture for at least 30 minutes to allow it to firm up.
Roll the chilled mixture into 1-inch balls. Roll each ball in crushed peppermint candies to coat.
Place truffles on a baking sheet lined with parchment paper and refrigerate for at least 15 minutes before serving.
