  • 2 cups all-purpose flour
  • 0.5 cups unsweetened cocoa powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 1.5 cups granulated sugar
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 tablespoon red food coloring
  • 1 teaspoon peppermint extract
  • 1 cup cream cheese frosting
  • 0.5 cup crushed peppermint candies

Preparation Steps

  • Preheat oven to 350°F (175°C). Line muffin tins with paper liners.
  • In a large bowl, whisk together flour, cocoa powder, baking soda, and salt.
  • In a separate bowl, combine sugar, oil, eggs, and vanilla extract. Beat until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in buttermilk, red food coloring, and peppermint extract.
  • Fill muffin liners about 2/3 full. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cupcakes cool completely before frosting. Frost with cream cheese frosting and sprinkle with crushed peppermint candies.

Notes

For extra peppermint flavor, add a few drops of peppermint oil to the batter.
