Instructions
Preparation Steps
Preheat oven to 350°F (175°C). Line muffin tins with paper liners.
In a large bowl, whisk together flour, cocoa powder, baking soda, and salt.
In a separate bowl, combine sugar, oil, eggs, and vanilla extract. Beat until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in buttermilk, red food coloring, and peppermint extract.
Fill muffin liners about 2/3 full. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Let cupcakes cool completely before frosting. Frost with cream cheese frosting and sprinkle with crushed peppermint candies.
Notes
For extra peppermint flavor, add a few drops of peppermint oil to the batter.
