Pineapple Cake

  • 1 cup unsweetened pineapple chunks

  • 1 tsp vanilla extract

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together pineapple, oil, eggs, and vanilla extract.
  • Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  • Pour batter into the prepared pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool completely before frosting.

Notes

For a sweeter cake, add 1/2 cup more sugar. You can also add different types of fruit, such as berries or peaches.
