  • 1.5 lb Ground Beef Lean ground beef recommended
  • 0.5 cup Long Grain Rice Uncooked
  • 1 medium Onion Chopped
  • 1 can Tomato Soup Condensed, undiluted
  • 1 cup Water
  • 1 tsp Salt
  • 0.5 tsp Black Pepper

Preparation Steps

  • In a large bowl, combine ground beef, uncooked rice, chopped onion, salt, and pepper. Mix well.
  • Shape the mixture into small meatballs, about 1 inch in diameter.
  • In a large skillet, place the meatballs. Pour tomato soup and water over the meatballs.
  • Bring to a simmer, then cover and cook for 30-35 minutes, or until the rice is tender and the meatballs are cooked through.
  • Serve hot over rice or mashed potatoes.

Notes

For a richer flavor, add a tablespoon of Worcestershire sauce to the tomato soup mixture.
