Instructions
Preparation Steps
In a large bowl, combine ground beef, uncooked rice, chopped onion, salt, and pepper. Mix well.
Shape the mixture into small meatballs, about 1 inch in diameter.
In a large skillet, place the meatballs. Pour tomato soup and water over the meatballs.
Bring to a simmer, then cover and cook for 30-35 minutes, or until the rice is tender and the meatballs are cooked through.
Serve hot over rice or mashed potatoes.
Notes
For a richer flavor, add a tablespoon of Worcestershire sauce to the tomato soup mixture.
