  • 1 lb Ground Beef Lean ground beef is recommended
  • 0.5 cup Uncooked Long-Grain Rice
  • 1 medium Onion Chopped
  • 2 cloves Garlic Minced
  • 1 can Diced Tomatoes (28 ounces), undrained
  • 4 cups Beef Broth
  • 1 tsp Dried Oregano
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper

Preparation Steps

  • In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  • Add the chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
  • Stir in the diced tomatoes (undrained), beef broth, uncooked rice, dried oregano, salt, and pepper. Bring the mixture to a boil.
  • Reduce the heat to low, cover the pot, and simmer for 35-40 minutes, or until the rice is cooked through and the soup has thickened.
  • Serve hot and enjoy!

Notes

For a spicier soup, add a pinch of red pepper flakes or a dash of hot sauce. You can also add other vegetables like carrots or celery.
