Total: 30 minutes minutes
Ingredients
- 250 g white potato peeled and cut into bite-sized pieces
- 250 g butternut squash peeled and cut into bite-sized pieces
- 40 g cheddar cheese grated
- 1 1/2 tablespoons plain flour
- 1/2 clove garlic crushed
- 1 teaspoon dried mixed herbs
- 25 g dried breadcrumbs
- oil for frying
- salt and black pepper to taste
Instructions
Chop the potato and butternut squash into bite-sized pieces. Place them in a saucepan, cover with boiling water, and cook for about 10 minutes until soft.
Drain the vegetables completely and return them to the saucepan. Mash with a hand masher, then mix in the cheese, flour, garlic, and herbs. Season with salt and pepper if desired.
Transfer the mash to a plate and let it cool slightly. Shape it into small tots or nuggets, then roll each one in the breadcrumbs.
Heat a little oil in a frying pan and fry the tots for 3 to 4 minutes on each side, until golden and crisp.
