Ingredients
- 2 cups old-fashioned rolled oats
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon baking powder
- 1/4 teaspoon fine salt
- 1 cup pumpkin puree
- 2 large eggs
- 1 1/2 cups milk
- 1/3 cup maple syrup
- 2 tablespoons melted butter cooled slightly
- 1 teaspoon vanilla extract
- 1/2 cup chopped pecans
Instructions
Heat the oven to 375°F and lightly grease a 9-inch square baking dish.
Whisk the oats, cinnamon, ginger, nutmeg, baking powder, and salt in a large bowl.
Whisk the pumpkin puree, eggs, milk, maple syrup, melted butter, and vanilla in a second bowl.
Pour the wet mixture into the dry ingredients and stir until evenly combined.
Spread the mixture in the prepared dish and sprinkle with pecans if using.
Bake for 30 to 35 minutes, until the center is set and the edges are lightly browned.
Cool for 10 minutes before slicing and serving warm.
