  • 1.5 cups Graham cracker crumbs
  • 0.5 cups Sugar
  • 0.25 cups melted butter
  • 16 ounces cream cheese softened
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 15 ounces pumpkin puree
  • 1 tsp pumpkin pie spice

Preparation Steps

  • Preheat oven to 350°F (175°C). Prepare a 9-inch springform pan.
  • Combine graham cracker crumbs, 1/2 cup sugar, and melted butter. Press into the bottom of the prepared pan.
  • Beat cream cheese and 1 cup sugar until smooth. Beat in eggs one at a time, then stir in vanilla and pumpkin puree. Mix in pumpkin pie spice.
  • Pour batter over the crust. Bake for 50-60 minutes, or until set.
  • Cool completely before serving.

Notes

For a richer flavor, use full-fat cream cheese. You can also add a dollop of whipped cream or a sprinkle of cinnamon before serving.
