Ingredients
- 1/2 cup butter softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/2 cup packed brown sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons all-purpose flour for the crumb topping
- 2 tablespoons cold butter cubed
Instructions
Heat the oven to 350°F. Grease an 8-inch square baking pan and line the bottom with parchment.
Beat the softened butter and granulated sugar until light. Beat in the egg and vanilla.
Whisk the flour, baking powder, and salt in a separate bowl. Add the dry mixture to the butter mixture in two additions, alternating with the milk, and mix just until combined.
Spread the batter in the prepared pan. Mix the brown sugar, cinnamon, and 2 tablespoons flour, then rub in the cold butter until crumbly. Sprinkle the topping evenly over the batter.
Bake for 32 to 35 minutes, until the center springs back lightly and a toothpick comes out with a few moist crumbs. Cool for 15 minutes before slicing.
