In a large bowl, whisk together the flour, baking powder, and salt.
Add the warm water and olive oil to the dry ingredients and mix until a shaggy dough forms.
Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic. Add more flour if needed to prevent sticking.
Divide the dough into 6 equal pieces and roll each piece into a thin circle, about 6 inches in diameter.
Heat a large skillet or griddle over medium-high heat. Once hot, cook each pita bread for 2-3 minutes per side, or until puffed up and lightly golden brown. If they don't puff up, that's okay!
Remove the pita breads from the skillet and wrap them in a clean kitchen towel to keep them warm and soft.
