Instructions
Preparation Steps
In a large pot or Dutch oven, brown the sausage over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
Add the onion and garlic to the pot and cook until softened, about 5 minutes.
Pour in the chicken broth and diced tomatoes. Stir in the Italian seasoning. Bring to a boil, then reduce heat and simmer for 15 minutes.
Add the tortellini and cook according to package directions, usually about 3-5 minutes.
Stir in the spinach and cook until wilted, about 1 minute. Season with salt and pepper to taste.
Serve hot, garnished with grated Parmesan cheese, if desired.
Notes
For a creamier soup, stir in a splash of heavy cream at the end. You can also add other vegetables, such as carrots or zucchini.
