  • 1 tablespoon Olive oil
  • 1 cup Chopped onion
  • 2 cloves Garlic, minced
  • 4 cups Chicken broth
  • 1 pound Russet potatoes, peeled and cubed
  • 0.5 cup Diced jalapenos Adjust to taste
  • 1 cup Heavy cream
  • 0.5 teaspoon Salt To taste
  • 0.25 teaspoon Black pepper To taste

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  • Pour in chicken broth and add potatoes and jalapenos. Bring to a boil, then reduce heat and simmer for 20 minutes, or until potatoes are tender.
  • Carefully transfer soup to a blender or use an immersion blender to blend until smooth. Return the soup to the pot.
  • Stir in heavy cream, salt, and pepper. Heat through, but do not boil.
  • Serve hot and garnish with your favorite toppings.

Notes

Garnish with shredded cheese, sour cream, or chopped cilantro for added flavor.
