  • 1.5 lb Ground Beef 80/20 blend recommended
  • 2 lb Potatoes Yukon Gold, peeled and cubed
  • 1 medium Onion Chopped
  • 2 cloves Garlic Minced
  • 1 cup Beef Broth
  • 0.25 cup Tomato Paste
  • 2 tsp Dried Thyme
  • 1 tsp Dried Rosemary
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 2 tbsp Olive Oil

Preparation Steps

  • Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned. Drain off any excess grease.
  • Add chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
  • Stir in tomato paste, dried thyme, dried rosemary, salt, and pepper. Cook for 1 minute more.
  • Add cubed potatoes and beef broth to the skillet. Bring to a simmer, then reduce heat to low, cover, and cook for 30-40 minutes, or until potatoes are tender.
  • Taste and adjust seasonings as needed. Serve hot.
