Ingredients
- 1 pound large sea scallops side muscles removed and patted dry
- 1 tablespoon olive oil divided
- 1/2 teaspoon fine salt divided
- 1/4 teaspoon black pepper
- 1 red grapefruit peeled and segmented
- 1 ripe avocado sliced
- 4 cups baby arugula
- 1 tablespoon lime juice
Instructions
Arrange the baby arugula, red grapefruit segments, and sliced avocado on four plates.
Whisk half the olive oil with the lime juice and half the salt, then drizzle it over the salad.
Season the dry sea scallops with the remaining salt and black pepper.
Heat the remaining olive oil in a heavy skillet over medium-high heat until shimmering.
Add the scallops in one layer and sear without moving for 2 to 3 minutes, until deeply golden.
Turn the scallops and cook for 1 to 2 minutes more, until just opaque in the center.
Set the hot scallops over the grapefruit avocado salad and serve immediately.
