  • 8 oz rice noodles soaked in warm water
  • 1 lb shrimp peeled and deveined
  • 2 tbsp soy sauce low sodium
  • 1 cup bell peppers sliced
  • 1 cup carrots julienned

Preparation Steps

  • Soak the rice noodles in warm water for 10 minutes and drain.
  • Heat oil in a pan over medium heat, add the shrimp, and cook until pink.
  • Add bell peppers and carrots, stir-fry for 3-4 minutes.
  • Add the noodles and soy sauce to the pan, toss everything together for another 5 minutes.
