Heat 1 tablespoon of olive oil in a pan over medium heat. Add shrimp and cook until pink and cooked through, about 2-3 minutes per side. Remove shrimp from the pan.
In the same pan, add another tablespoon of olive oil. Place one tortilla in the pan, sprinkle with cheese, add cooked shrimp, and top with another tortilla. Cook until golden brown and crispy, about 3 minutes per side.
Repeat with remaining tortillas and fillings. Cut each quesadilla into wedges and serve immediately.
