  • 1 lb Large Shrimp, peeled and deveined Tail on or off, your preference
  • 1 lb Linguine Pasta
  • 0.5 cup Dry White Wine Such as Pinot Grigio or Sauvignon Blanc
  • 0.5 cup Butter Salted or unsalted
  • 6 cloves Garlic, minced
  • 0.25 cup Fresh Parsley, chopped
  • 0.25 tsp Red Pepper Flakes Optional, for heat
  • 2 tbsp Olive Oil
  • 0.25 tsp Salt To taste
  • 0.25 tsp Black Pepper To taste

Preparation Steps

  • Cook the pasta according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
  • While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes (if using) and cook for about 30 seconds, until fragrant.
  • Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through.
  • Pour in the white wine and let it simmer for 1-2 minutes, allowing the alcohol to evaporate.
  • Stir in the butter until melted and the sauce is smooth. Season with salt and pepper to taste.
  • Add the drained pasta to the skillet and toss to coat with the sauce. If the sauce is too thick, add some of the reserved pasta water until it reaches your desired consistency.
  • Stir in the chopped parsley and serve immediately. Garnish with extra parsley and a squeeze of lemon juice, if desired.

Notes

For a richer sauce, add a tablespoon of heavy cream at the end.
