Slow Cooker Creamy Chicken Noodle Soup

  • 1.5 pound boneless, skinless chicken breasts
  • 0.5 cup chopped yellow onion
  • 0.5 cup chopped carrots
  • 0.5 cup chopped celery
  • 4 cup chicken broth
  • 1 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 6 ounce egg noodles
  • 0.5 cup heavy cream
  • 0.25 cup chopped fresh parsley for garnish

Preparation Steps

  • Place chicken breasts, onion, carrots, celery, chicken broth, thyme, salt, and pepper in your slow cooker.
  • Cover and cook on low for 3-4 hours, or until chicken is cooked through.
  • Remove chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.
  • Stir in the egg noodles and heavy cream. Cook on high for another 30-45 minutes, or until noodles are tender.
  • Serve hot, garnished with fresh parsley.

Notes

This soup can be made ahead of time. Store leftovers in an airtight container in the refrigerator for up to 3 days.
