  • 1.5 lb Boneless, skinless chicken thighs
  • 1 can Cream of chicken soup
  • 1 can Diced green chiles 4 oz can
  • 1 cup Chicken broth
  • 1 cup Long grain rice Uncooked
  • 1 cup Shredded cheddar cheese

Instructions
 

Preparation Steps

  • Place chicken thighs in the bottom of a slow cooker.
  • Pour cream of chicken soup, diced green chiles, and chicken broth over the chicken.
  • Sprinkle rice over the mixture. Do not stir.
  • Cover and cook on low for 7 hours or high for 3 hours.
  • Shred the chicken with two forks. Stir in the shredded cheese until melted.
  • Serve hot and enjoy!

Notes

For a spicier version, use hot diced green chiles.
