Slow Cooker Pepper Steak

A delicious and easy slow cooker pepper steak recipe, perfect for a weeknight dinner!

  • 2 lb Beef Stew Meat cut into 1-inch cubes
  • 1 each Green Bell Pepper sliced
  • 1 each Red Bell Pepper sliced
  • 1 each Yellow Onion sliced
  • 1 can Diced Tomatoes 14.5 oz, undrained
  • 1 cup Beef Broth low sodium
  • 1 tbsp Soy Sauce low sodium
  • 1 tbsp Worcestershire Sauce
  • 1 tsp Garlic Powder
  • 1 tsp Black Pepper
  • 2 tbsp Cornstarch (optional, for thickening)
  • 2 tbsp Water (optional, for thickening)

Preparation Steps

  • In a large bowl, combine the beef stew meat, green bell pepper, red bell pepper, yellow onion, diced tomatoes, beef broth, soy sauce, Worcestershire sauce, garlic powder, and black pepper.
  • Transfer the mixture to a slow cooker.
  • Cook on low for 8 hours or on high for 4 hours.
  • If desired, thicken the sauce by whisking together cornstarch and water in a small bowl. Stir into the slow cooker during the last 30 minutes of cooking.
  • Serve over rice or noodles.

Notes

For a spicier dish, add a pinch of red pepper flakes.
