Slow Cooker Pulled Pork

Ingredients
- 1 boneless pork shoulder trimmed and cut into large chunks
- 1 small yellow onion finely chopped
- 6 ounces tomato paste
- 1/3 cup apple cider vinegar
- 1/3 cup honey
- 1/4 cup water
- 2 tablespoons brown sugar
- 2 teaspoons smoked paprika
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
Instructions
Place the onion in the slow cooker and set the pork on top.
Whisk the tomato paste, vinegar, honey, water, brown sugar, smoked paprika, salt, pepper, and garlic powder until smooth; pour over the pork.
Cover and cook on LOW for 8 hours, or until the pork is very tender and pulls apart easily with a fork.
Transfer the pork to a bowl, shred it, and discard large pieces of excess fat. Return the meat to the sauce and toss before serving.
