Instructions
Preparation Steps
Season short ribs with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Sear short ribs on all sides until browned.
Place seared short ribs in the slow cooker.
In the same skillet, sauté onion and garlic until softened. Add tomato paste and cook for 1 minute.
Pour in beef broth and red wine, scraping up any browned bits from the bottom of the skillet. Add Worcestershire sauce and thyme.
Pour the sauce over the short ribs in the slow cooker.
Cook on low for 6 hours, or on high for 3 hours, or until the short ribs are very tender.
Notes
Serve with mashed potatoes or polenta for a complete meal.
