Instructions

Step 1: Prepare the Cake Batter

  • Preheat oven to 350°F (175°C). Grease and line two 6-inch cake pans with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt. Set aside.
  • In a large bowl, beat butter and honey (or maple syrup) until smooth.
  • Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  • Mix in mashed bananas (or applesauce) and milk until well combined.
  • Gradually fold in dry ingredients until the batter is smooth.

Step 2: Bake the Cake

  • Divide batter evenly between the two cake pans.
  • Bake for 22-25 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cakes cool in pans for 10 minutes, then transfer to a cooling rack to cool completely.

Step 3: Make the Frosting

  • In a bowl, mix Greek yogurt, cream cheese, vanilla extract, and honey (if using).
  • Stir until smooth and creamy. Refrigerate for 10 minutes before using.

Step 4: Assemble the Cake

  • Place one cake layer on a serving plate. Spread a layer of frosting on top.
  • Stack the second cake layer and frost the entire cake with a thin, even layer.
  • For extra decoration, pipe a few swirls of frosting or add soft fruit on top.

Step 5: Serve & Enjoy!

  • Best served fresh. Refrigerate until ready to serve.
  • Store leftovers in an airtight container in the fridge for up to 2 days.
