Sourdough Rye Bread Recipe

This sourdough rye bread is a simple, crusty loaf with a tangy flavor characteristic of sourdough.

  • 2.5 cups rye flour
  • 1.5 cups bread flour
  • 1 cup water lukewarm
  • 1 cup sourdough starter active
  • 2 teaspoons salt

Preparation Steps

  • In a large bowl, mix the sourdough starter with lukewarm water until combined.
  • Add the rye and bread flours. Stir until the dough forms.
  • Add salt. Mix until well combined.
  • Allow the dough to rest covered for 12-14 hours at room temperature.
  • Shape the dough into a loaf and place into a greased loaf pan.
  • Let it rise again for 2 hours.
  • Preheat the oven to 450°F (232°C).
  • Bake for 45 minutes or until the bread sounds hollow when tapped.

Notes

Let the bread cool completely before slicing for best results.
