Spicy Chicken Pot Pie

A flavorful twist on the classic chicken pot pie with spicy seasoning and a flaky crust.

  • 3.5 cups cooked chicken, shredded You can use rotisserie chicken for convenience.
  • 1 cup frozen peas and carrots Thawed
  • 4 tablespoons butter
  • 1 cup chicken broth Low sodium
  • 1 teaspoon cayenne pepper Adjust to taste for spiciness

Preparation Steps

  • Preheat oven to 425°F (220°C).
  • In a saucepan, melt the butter over medium heat. Stir in flour and cook for 1 minute.
  • Gradually whisk in chicken broth and cayenne pepper until smooth. Cook until thickened.
  • Stir in chicken and vegetables. Remove from heat.
  • Transfer mixture into a pie shell. Cover with top pastry, seal edges, and cut slits in top.
  • Bake in preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly.

Notes

Allow pie to rest for 10 minutes before serving for easier slicing.
