Spinach Mushroom Quiche

This delicious spinach mushroom quiche is perfect for brunch or a light lunch.

  • 2 cups fresh spinach chopped
  • 1 cup mushrooms sliced
  • 1 cup shredded cheese cheddar or your choice
  • 4 units eggs beaten
  • 0.5 cup milk whole or 2%
  • 1 pinch salt
  • 0.5 tsp black pepper

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • In a skillet, sauté mushrooms until golden brown.
  • Add spinach to skillet and cook until wilted.
  • In a bowl, whisk eggs, milk, salt, and pepper.
  • Place spinach and mushroom mixture in a pie crust, then pour egg mixture over it.
  • Sprinkle cheese on top and bake for 40 minutes.

Notes

Feel free to substitute cheese with your favorite variety.
