This delicious spinach mushroom quiche is perfect for brunch or a light lunch.

Instructions
Preparation Steps
Preheat oven to 350°F (175°C).
In a skillet, sauté mushrooms until golden brown.
Add spinach to skillet and cook until wilted.
In a bowl, whisk eggs, milk, salt, and pepper.
Place spinach and mushroom mixture in a pie crust, then pour egg mixture over it.
Sprinkle cheese on top and bake for 40 minutes.
