Preparation Steps

  • Cook the orzo pasta according to package instructions. Drain and set aside to cool.
  • In a large bowl, combine the cooked orzo, spinach, cherry tomatoes, feta cheese, and red onion.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  • Pour the dressing over the orzo mixture and toss until everything is well coated.
