  • 2 lb Potatoes Yukon Gold or Russet
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth or chicken broth
  • 2 tablespoons Olive Oil extra virgin
  • 1 teaspoon Paprika smoked paprika recommended
  • 0.5 teaspoon Dried Thyme
  • 0.25 teaspoon Salt to taste
  • 0.25 teaspoon Black Pepper to taste

Preparation Steps

  • Peel and chop the potatoes into 1-inch cubes.
  • Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add garlic and cook for another minute until fragrant.
  • Add potatoes, vegetable broth, paprika, thyme, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until potatoes are tender.
  • Taste and adjust seasoning as needed. Serve hot.

Notes

Garnish with fresh parsley, if desired. For a richer flavor, add a tablespoon of butter towards the end of cooking.
