Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic and cook for another minute until fragrant.
Add potatoes, vegetable broth, paprika, thyme, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until potatoes are tender.
Taste and adjust seasoning as needed. Serve hot.
Notes
Garnish with fresh parsley, if desired. For a richer flavor, add a tablespoon of butter towards the end of cooking.
