Sticky Asian Pomegranate Chicken

Delicious sticky chicken with Asian flavors and a touch of pomegranate. Perfect for a quick and easy weeknight meal!

  • 1.5 lbs Boneless, skinless chicken thighs cut into 1-inch pieces
  • 0.25 cup Soy sauce
  • 0.25 cup Honey
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Sesame oil
  • 2 cloves Garlic minced
  • 1 teaspoon Ginger grated
  • 0.5 cup Pomegranate seeds

Preparation Steps

  • In a bowl, whisk together soy sauce, honey, rice vinegar, and sesame oil. Add minced garlic and grated ginger. Reserve 2 tablespoons of the marinade for later.
  • Add chicken to the bowl and marinate for at least 15 minutes, or up to 2 hours in the refrigerator.
  • Heat a large skillet or wok over medium-high heat. Add the marinated chicken and cook, stirring occasionally, until cooked through and slightly caramelized, about 8-10 minutes.
  • Stir in the reserved marinade and cook for another minute until the sauce thickens slightly. Garnish with pomegranate seeds and serve hot.

Notes

Serve with rice or quinoa for a complete meal. You can also add some chopped green onions for extra flavor and garnish.
