Preparation Steps
In a bowl, whisk together soy sauce, honey, rice vinegar, and sesame oil. Add minced garlic and grated ginger. Reserve 2 tablespoons of the marinade for later.
Add chicken to the bowl and marinate for at least 15 minutes, or up to 2 hours in the refrigerator.
Heat a large skillet or wok over medium-high heat. Add the marinated chicken and cook, stirring occasionally, until cooked through and slightly caramelized, about 8-10 minutes.
Stir in the reserved marinade and cook for another minute until the sauce thickens slightly. Garnish with pomegranate seeds and serve hot.
Notes
Serve with rice or quinoa for a complete meal. You can also add some chopped green onions for extra flavor and garnish.
