Strawberry Greens Salad

A refreshing and vibrant strawberry salad with mixed greens, almonds, and a delightful poppy seed dressing. Perfect for a light lunch or a side dish.

Ingredients
  

Dressing

  • 1 tbsp red wine vinegar
  • 1 tbsp cider vinegar
  • 2 tbsp olive oil
  • 1 tsp minced shallots
  • 1.5 tbsp honey
  • 0.5 tbsp poppy seeds

Salad

  • 5 oz organic mixed baby greens
  • 0.25 cup slivered almonds
  • 2 cup sliced strawberries
  • 0.25 cup crumbled gorgonzola cheese

Instructions
 

Preparation Steps

  • In a small jar, combine all the dressing ingredients and shake well.
  • In a large salad bowl, combine the mixed greens, slivered almonds, sliced strawberries, and crumbled gorgonzola cheese. Toss with the prepared dressing just before serving, or divide the salad ingredients equally among four plates and drizzle with dressing.

Notes

This salad is best enjoyed fresh. You can omit the gorgonzola cheese for a dairy-free option.
