These Strawberry Heart Hand Pies are the perfect Valentine's Day treat! Made with flaky pie crust and a sweet strawberry filling, they're sure to be a hit.
In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
Gradually add the ice water, mixing until the dough just comes together. Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
While the dough is chilling, prepare the strawberry filling. In a medium saucepan, combine the chopped strawberries, sugar, cornstarch, and lemon juice. Cook over medium heat, stirring constantly, until the mixture thickens, about 5-7 minutes. Let cool slightly.
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
On a lightly floured surface, roll out the dough to about 1/8 inch thickness. Use a heart-shaped cookie cutter to cut out dough shapes. Place half of the hearts on the prepared baking sheet.
Spoon about 1-2 tablespoons of strawberry filling onto each heart. Top with another heart, pressing the edges to seal. Crimp the edges with a fork.
Brush the tops of the hand pies with the egg wash. Cut a small slit in the top of each pie to vent steam.
Bake for 20-25 minutes, or until golden brown. Let cool slightly before serving.
