Instructions
Preparation Steps
In a medium bowl, whisk together the flour, matcha powder, baking powder, and salt.
In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chopped freeze-dried strawberries.
Wrap the dough in plastic wrap and chill for at least 30 minutes.
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
Roll out the dough on a lightly floured surface to about 1/4 inch thickness. Cut out cookies using your desired shapes.
Place cookies on the prepared baking sheets and bake for 10-12 minutes, or until the edges are lightly golden.
Let cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
