Strawberry Matcha Cookies

  • 1 cup All-Purpose Flour Plus more for dusting
  • 1 tsp Matcha Powder Culinary grade
  • 0.5 tsp Baking Powder
  • 0.25 tsp Salt
  • 0.5 cup Unsalted Butter Softened
  • 0.5 cup Granulated Sugar
  • 1 large Egg Room temperature
  • 1 tsp Vanilla Extract
  • 0.5 cup Freeze-Dried Strawberries Chopped

Preparation Steps

  • In a medium bowl, whisk together the flour, matcha powder, baking powder, and salt.
  • In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chopped freeze-dried strawberries.
  • Wrap the dough in plastic wrap and chill for at least 30 minutes.
  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Roll out the dough on a lightly floured surface to about 1/4 inch thickness. Cut out cookies using your desired shapes.
  • Place cookies on the prepared baking sheets and bake for 10-12 minutes, or until the edges are lightly golden.
  • Let cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
