Preparation Steps
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a medium bowl, whisk together flour, baking powder, and salt.
In a large bowl, cream together butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the matcha powder and crushed freeze-dried strawberries.
Drop by rounded tablespoons onto the prepared baking sheets.
Bake for 10-12 minutes, or until the edges are lightly golden brown.
Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
Notes
For best results, use high-quality matcha powder. Store in an airtight container at room temperature.
