Strawberry Matcha Cookies

  • 1.5 cup All-Purpose Flour
  • 1 tsp Baking Powder
  • 0.5 tsp Salt
  • 0.5 cup Unsalted Butter Softened
  • 0.75 cup Granulated Sugar
  • 1 large Egg
  • 1 tsp Vanilla Extract
  • 2 tbsp Matcha Powder Culinary Grade
  • 0.5 cup Freeze-Dried Strawberries Crushed

Preparation Steps

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a large bowl, cream together butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the matcha powder and crushed freeze-dried strawberries.
  • Drop by rounded tablespoons onto the prepared baking sheets.
  • Bake for 10-12 minutes, or until the edges are lightly golden brown.
  • Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

For best results, use high-quality matcha powder. Store in an airtight container at room temperature.
