Strawberry Scones

Deliciously sweet and slightly tart strawberry scones, perfect for breakfast or a snack.

  • 2.5 cups all-purpose flour
  • 0.33 cup granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cup cold unsalted butter cut into cubes
  • 1 cup fresh strawberries hulled and finely chopped
  • 0.5 cup heavy cream
  • 1 large egg beaten, for egg wash

Preparation Steps

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  • Gently stir in the chopped strawberries.
  • Pour in the heavy cream and mix until just combined. Do not overmix.
  • Turn the dough out onto a lightly floured surface and pat into a 0.75-inch thick round. Cut into 8 wedges.
  • Place the scones on the prepared baking sheet. Brush the tops with the beaten egg.
  • Bake for 12-15 minutes, or until golden brown.
  • Let cool on a wire rack before serving.

Notes

Serve warm with a dollop of whipped cream or your favorite jam.
