Stuffed Bell Peppers
Delicious and colorful stuffed bell peppers filled with seasoned ground beef and rice.

Preparation Steps
Preheat oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
In a large skillet, brown the ground beef over medium heat. Drain off any excess fat.
Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix well.
Spoon the ground beef mixture into the bell peppers.
Place the stuffed bell peppers in a baking dish and add about 1/2 inch of water to the bottom of the dish.
Bake for 35-40 minutes, or until the bell peppers are tender.
If desired, sprinkle with shredded cheddar cheese during the last 5 minutes of baking.
Let cool slightly before serving.
Notes
For a spicier dish, add a pinch of red pepper flakes to the ground beef mixture.
