Stuffed Bell Peppers

Delicious and colorful stuffed bell peppers filled with seasoned ground beef and rice.

Ingredients

  • 1 lb Ground beef Lean
  • 1 cup Cooked rice White or brown rice
  • 1 medium Onion Diced
  • 1 clove Garlic Minced
  • 1 can Diced tomatoes (14.5 oz), undrained
  • 1 tsp Italian seasoning
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 4 medium Bell peppers Any color
  • 1 cup Shredded cheddar cheese Optional

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  • In a large skillet, brown the ground beef over medium heat. Drain off any excess fat.
  • Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
  • Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix well.
  • Spoon the ground beef mixture into the bell peppers.
  • Place the stuffed bell peppers in a baking dish and add about 1/2 inch of water to the bottom of the dish.
  • Bake for 35-40 minutes, or until the bell peppers are tender.
  • If desired, sprinkle with shredded cheddar cheese during the last 5 minutes of baking.
  • Let cool slightly before serving.

Notes

For a spicier dish, add a pinch of red pepper flakes to the ground beef mixture.
