  • 1 cup Cooked Rice Long grain or brown rice
  • 3 Bell Peppers Assorted colors, chopped
  • 1 large Onion Chopped
  • 2 cloves Garlic Minced
  • 28 ounce Crushed Tomatoes
  • 4 cups Beef Broth
  • 1 tablespoon Olive Oil
  • 1 teaspoon Italian Seasoning
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Preparation Steps

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef and cook until browned, breaking it up with a spoon.
  • Add onion and garlic to the pot and cook until softened, about 5 minutes.
  • Stir in bell peppers, crushed tomatoes, beef broth, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the peppers are tender.
  • Stir in cooked rice and heat through. Serve hot.
