Stuffed Peppers

A delicious and healthy recipe for stuffed peppers, perfect for a weeknight dinner.

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 0.5 cup diced onion
  • 1 teaspoon cumin

Preparation Steps

  • Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
  • Brown the ground beef in a skillet over medium heat. Drain off any excess fat.
  • Add the onion and cumin to the skillet and cook until softened.
  • Stir in the cooked rice and season with salt and pepper to taste.
  • Fill each bell pepper with the beef and rice mixture.
  • Place the stuffed peppers in a baking dish and bake for 45 minutes, or until the peppers are tender.

Notes

Serve hot with a side of your favorite vegetables.
