Sugar-Free Apple Pie Bars
Chewy sugar-free apple pie bars made with dates, oats, walnuts, cinnamon, ginger, and fresh apples.

Ingredients
- 3 cups pitted dates soaked in warm water for 20 minutes if dry, then drained
- 2 cups old-fashioned rolled oats divided
- 1 cup raw unsalted walnuts
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt
- 1 cup diced apples
Instructions
Preheat the oven to 350°F. Line an 8-by-8-inch baking dish with parchment, leaving overhang, and set aside.
Pulse the dates, 1 cup of oats, walnuts, cinnamon, and ginger in a food processor until a textured, sticky dough forms; do not overprocess.
Add the remaining oats and diced apples and pulse only a few times. If needed, finish mixing with a spoon or clean hands.
Dampen your hands slightly and press the mixture firmly into the prepared dish.
Bake for 20 minutes, until the mixture is about one shade darker.
Cool completely in the pan on a rack, lift out using the parchment, and cut into 16 squares.
